Lime honey is one of the most appreciated types of honey. It has a yellow-orange-reddish color and contains besides monosaccharides, volatile oils high in farnesol which gives it its characteristic smell and taste, an unmistakable fragrance and a special aroma of lime blossoms. In its sediment the pollen granules reach up to 70-80%. The consistency of lime honey is uniform, fluid, viscous or crystallized. In the crystallized state, honey has a lighter color.
